Do you eat to live or live to eat? Whichever your answer is, my purpose today is to share with you five tasty dinner recipes you and your family will love. Without further ado, let’s get started.

Here are 5 family-favorite, tasty dinner recipes. 

Spicy Rice and Beans

So delicious that you can easily overeat this flavorful meal if you don't tone down your appetite. It's perfect for vegetarians, and meat lovers will get addicted to it as well. And, it's the ideal mix of light but filling enough.

Ingredients

  • 1 1⁄2 cups uncooked long grain brown rice
  • 1 can beans drained (red kidney beans or pinto beans)
  • 1⁄2 cup fresh corn
  • 1 tablespoon canola oil
  • 3 cloves smashed (minced) garlic
  • 1 teaspoon ground cumin
  • 1 tablespoon vegetable bouillon granules
  • 1 cup chopped onion
  • 1 teaspoon ground coriander
  • 1 cup chopped tomato
  • 1⁄2 cup chopped celery
  • 1⁄2 cup grated carrot
  • 2 tablespoons fresh parsley
  • 1 seeded and finely diced jalapeño pepper
  • 1 tablespoon chopped fresh cilantro (optional)
  • 2 teaspoons chili powder
  • 1 bay leaf
  • 2 3⁄4 cups water.
  • Salt to taste

Instructions

    1. Saute celery, garlic, onion, and jalapeño pepper in canola oil for 3 minutes in a non-stick frying pan, stirring occasionally.
    2. Next, add rice, followed by coriander, cumin, and chili powder.
    3. Cook on medium heat, stirring frequently until golden.
    4. Then stir in water, carrot, bay leaf, and bouillon powder.
    5. Cover and simmer on medium-low heat for 15 minutes.
    6. Uncover and stir in corn, tomato, and beans. Then cover again, simmering the mixture until liquid is absorbed (about 15 minutes).
    7. Remove from heat and discard the bay leaf.
    8. Next, stir in 1 tablespoon parsley and cilantro.
    9. Garnish with remaining parsley before serving.

Notes

You can make your dish as spicy as you wish by adding more or fewer spices. It's best to serve this while still warm. Feel free to accompany it with a glass of cold fresh fruit juice.

One-Pot Savory Corn and Beans

One-pot corn and beans is another perfect delicacy for vegetarians, vegans, and meat eaters alike. This nutritious and low-calorie delicacy is very popular in Western and Subsaharan Africa. That's because it's delicious, filling, affordable, and relatively healthy.

Though it takes a number of hours to cook, the ingredients necessary for the recipe depend purely on how basic or intricate you want your dish to be. However, all you need are sweet corn, beans, and some spices according to your taste. Here is my personal one-pot corn and beans recipe.

Ingredients

  • 1 1⁄2 cup shelled sweet corn
  • 1 cup cranberry beans or any other variety of beans you prefer
  • 2 full and ripe tomatoes, sliced
  • 1 whole onion, sliced
  • 3 tablespoons olive oil or vegetable oil
  • 1 tablespoon salt
  • An adequate amount of water (to fully cover corn and beans mixture)

Instructions

  1. Put your corn and beans in an appropriately sized colander and wash thoroughly with running water, making sure to pick out or drain away any unwanted substances including silk, debris, etc.
  2. Then put the mixture in a skillet and add water until completely submerged.
  3. Next, cover and bring to a boil until tender.
  4. In a separate skillet, heat the oil on medium heat until hot (2-3 minutes).
  5. Then add onions to the skillet, stirring occasionally until browning begins.
  6. Next, add tomato slices and stir until a thick paste is formed.
  7. Then, stir in the boiled sweet corn and beans mixture and stir well, making sure the paste is mixed well with all ingredients. At this point, you can stir in any additional spices you desire.
  8. Finally, let the dish simmer for approximately 5 minutes on medium heat before removing from heat and serving.

Notes

Serving suggestion: Enjoy with black coffee.

Rice and Beef Stew

Delicious, filling, and ready in under 30
minutes.

Ingredients

  • 1 1⁄2 cup cooked long grain brown rice
  • 1 lb. lean beef, cut into tiny cubes
  • 2 full, ripe tomatoes, sliced
  • 1 onion, sliced
  • 2 tablespoons olive oil
  • A bunch of fresh, cilantro leaves, sliced
  • 1⁄2 white onion, sliced
  • Other spices of your choice (optional)
  • An adequate amount of water

Instructions

  1. Boil water in a pot for rice, using at least 6 cups of water for every cup of rice.
  2. Add the rice to your boiling water and maintain a boil while you cook the stew, reducing heat as necessary.
  3. Wash beef cubes and boil until tender.
  4. In a separate skillet, heat the oil until hot (2-3 minutes).
  5. Add onions (both regular and white onions) and let cook briefly until almost brown.
  6. Now, add tomato, cilantro, and any additional spices and let cook while stirring occasionally, until a thick paste is formed.
  7. Add in the tender beef, stir thoroughly to mix well with the paste, and add 1⁄2 glass of water.
  8. Then let simmer on medium heat until the stew is cooked well (approximately 3 minutes).
  9. Serve cooked rice on a plate.
  10. Finally, remove the stew from the heat and serve warm on top of rice. Garnish with some fresh parsley or green beans.

  5. Pour in 1⁄2 cup water and let the meatballs and sauce simmer on medium heat (approximately 3 minutes).
  6. Meanwhile, serve cooked spaghetti on a plate (reheat if necessary).
  7. Then, remove the meatballs and sauce mix from the heat and serve warm on top of pasta.

This mouthwatering delicacy is popular in many countries across the globe. To save time and effort, you can opt for ready-made tortillas as opposed to making your own.

Ingredients

  • Tortillas for you and your family
  • 1 cup boiled and tender cranberry beans, or any other variety of beans you prefer
  • 2 full, ripe tomatoes, sliced
  • 1 whole onion, sliced
  • 3 tablespoons olive oil or vegetable oil
  • 1 tablespoon salt
  • Water

  4. Then, stir in beans well, making sure to completely mix with the paste. This is also the time to stir in any additional spices you desire.
  5. Let simmer for approximately 5 minutes on medium heat.
  6. Remove from heat and serve on tortillas.

Notes

Suggestion: Warm tortillas in the microwave or on a skillet before filling with the stew. Enjoy!
