As I sit here, I’m already thinking about breakfast and what I can throw in my mouth as we rush out the door for preschool drop off. I used to be a die hard breakfast eater, but in the last year or so my morning meal has taken a back seat to finishing up work, packing lunches and promises to “eat something later.” But my waistline has spoken, and months of skipping the metabolism-starting meal has left me with love handles and a late morning energy crash. I’m done with avoiding breakfast, even though the rest of my busy life hasn’t changed. I’ll take one for the team and actually start planning and that’s why I’m starting with something easy that will last a few days: oatmeal bakes! I love how healthy oats help you stay full until lunch, are relatively easy to make, and can be customized with fruit. Check out my list of easy oatmeal options.

1. Blueberry Oatmeal Bake
I searched a long time before finding this healthy, and pantry-friendly recipe. While there are tons of amazing oatmeal bakes out there that involve blueberries, many of them have ingredients I don’t have- a deal breaker. This healthy version is tasty and simple- oats, blueberries, milk, egg, butter and vanilla extract. The fanciest ingredient is honey, something I can definitely get on board with. This oatmeal bake is pretty and I bet pretty tasty too.
