3. Cranberry Cheesecake Brownies
Ingredients
- ⅔ cup flour
- 1 tablespoon unsweetened cocoa powder
- ⅛ teaspoon salt
- 1 stick of unsalted butter
- ¾ cup semi-sweet chocolate chips or chunks
- ⅔ cup white sugar
- 2 eggs
- 1 teaspoon vanilla
- ⅔ cup white chocolate chips
- 8 ounces cream cheese, room temperature
- 1 egg yolk
- 5 tablespoons sugar
- ¼ teaspoon vanilla
- ⅔ cup leftover cranberry sauce
Instructions
- Preheat oven to 350 degrees. Grease or line square pan (8×8 or 9×9).
- Combine flour, cocoa powder, and salt in a medium bowl with whisk and save for later.
- Using the microwave or stovetop, melt semi-sweet chocolate and butter until all ingredients are combined and there are no lumps.
- In the chocolate and butter mixture, beat in white sugar and 1 tsp. vanilla with electric mixer. Add eggs individually, making sure mixture is smooth before adding each egg. Add flour mixture slowly mixing frequently. Fold in white chocolate chips and add to greased pan.
- In new bowl, combine cream cheese, egg yolk, 5 tablespoons sugar, and vanilla with electric mixer until creamy. Drop spoonfuls of mixture onto brownie pan, followed by spoonfuls of cranberry sauce. Use a butter knife and drag through mixture to create a “swirl” pattern.
- Bake for 35-45 minutes and until toothpick comes out clean.
- Cool before serving.
