Recently I was browsing Pinterest, trying to find a good recipe for a meal to bring my friend who just had a baby. While I know casseroles are the “it” thing to take someone who is recovering (because who doesn’t love a creamy, cheesy casserole?), I was in the mood to try something a little different. I came across a delicious recipe for a Chicken Tamale Pie, and I was instantly intrigued. Pretty much the only thing I make in my pie dish is chicken pot pie or quiche (yes, never an actual fruit pie- I’m intimidated ashamed), and I kinda feel like I can do better. 1. Ricotta Rustic Pie
If you are a vegetarian or just wanting to cook a meal without meat, this ricotta pie fits the bill. All you need is spinach, cheese, 1 egg and a pie crust and you’ve got yourself a delicious and semi-healthy (heck, there’s quite a bit of cheese in this thing!) meal. Not only that, it looks gorgeous too. I think I’m going to use cutouts on my next pie!

2. Shepherd’s Pie
I feel like Shepherd’s Pie is the King of all dinner pies, don’t you? Well, maybe it’s a toss up between Chicken Pot Pie and Shepherd’s. Either way, there’s no real loser because they are both delicious. Shepherd’s Pie is a traditional English pie that’s made with ground beef, onions and mashed potatoes, amongst other ingredients. It was original created as a way to use leftover meat, but most of us probably go out to buy everything we need these days. No matter your version of Shepherd’s Pie, it’s bound to leave you happy and full!

3. Cheeseburger Pie
Sometimes you just want comfort food and this dish is for you. You probably have most of the times you already need, and you don’t need a BBQ to grill up this cheeseburger pie. Once you brown the meet and onions, throw everything in a pie dish and top with cheese and some Bisquick. YUM!

5. Taco Pie
I love tacos, but eating them is messy. Especially if you’re having dinner with a 2 year old who thinks that taco shells are actually just large chips and dumps out all the filling! This pie has all the tasty goodness of tacos, but confined in a neat and tidy pie dish. You’ll be surprised how easy it is!

6. Seafood Pot Pie
I’m not going to lie: I love fish but whenever I hear the word seafood I get a little nervous. Seafood usually means a combo of multiple types of fish and I’m not sure I like that. However, MANY people do (and it’s not all about me), especially those who don’t eat meat so we just had to include a fish-friendly pie. This Seafood Pot Pie includes shrimp, scallops and crab and is packed in a tasty crust. It looks super tasty and healthy!
