Just because Thanksgiving is over, doesn’t mean you can’t continue to enjoy your favorite holiday food. Instead of just throwing your remnants onto a plate and nuking them in the microwave, take a look at some of these creative recipes that will get you using your leftovers in a brand new way. 1. Leftover Turkey Pot Pie
INGREDIENTS
- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1 small onion, diced
- 2/3 cup frozen corn kernels
- 1/2 cup frozen diced carrots
- 1/2 cup frozen peas
- 1/3 cup all-purpose flour
- 1 cup chicken broth
- 3/4 cup milk
- 1 teaspoon fresh thyme leaves
- Kosher salt and freshly ground black pepper, to taste
- 2 cups chopped leftover Thanksgiving turkey
- 1 puff pastry sheet, cut into four 4 1/4-inch squares
- 1 large egg, beaten
INSTRUCTIONS
- Preheat oven to 375 degrees F. Grease pie pan or four 10 ounce ramekins.
- Heat butter in large pan until melted. Combine garlic, onion, corn, carrots and peas with butter until onions have become see through. Add flour and combine with whisk until integrated and slightly browned. Slowly add chicken broth, milk and thyme, and combine with consistent whisking until mixture is thick. Add turkey; season with salt and pepper, to taste.
- Pour mixture into pie pan or ramekins and layer puff pastry on top. Make 4 vents in the top of the crust with a knife, cutting slowly to avoid tears. Brush each crust with the beaten egg.
- Bake for 20 minutes or crust is browned. Allow to cool at least 5 minutes before serving.
