Chicken Parm is one of my Italian favorites but my daughter isn’t impressed by how daunting it looks on a plate. That’s why a muffin pan version is a hit. This recipe uses all your favorite ingredients, like chicken and cheese (oh you KNOW there’s cheese) and is baked warm and toasty in a muffin pan. Delish!
