2. Peanut Butter & Jelly Rollup, carrots, cucumber and strawberries
Who doesn’t love a PB & J? As an adult, sometimes I make one in a pinch and I realize I’ve forgotten how delicious they are! This lunch is balanced out with some fruits and veggies for added nutrition. Making the rollups is simple- just remove crusts from bread and then use a rolling pin to smash the bread. Then make a PB&J as usual, roll and slice!
