One of my biggest guilty pleasures has got to be ice cream. I just can’t resist it! And that goes for ice cream in any form. Even during the winter when temperatures are nearly below freezing, I’m tempted to stock up on my favorite ice cream flavors.
Ice cream sandwiches are no exception, and whoever invented them was a genius. I’ve really only tried the traditional kind of ice cream sandwich, but my oh my is there a whole world of variations out there! These recipes are so amazing, I think I’ll have to try every single one, like, a million times.

Since these are made with waffles, I can totally eat them for breakfast, right? And since they are a type of sandwich, I can also get away with eating them for lunch, yes? These are so simple to make. You just scoop ice cream in between the waffles, freeze, and dip in your favorite toppings. Heck, this is also dessert! If “ice cream sandwich” was a food group, I’d definitely get my daily servings!
