Now that Easter has come and gone, you probably find your fridge stocked with quite a few colorful hard boiled eggs. If you’ve already had your fill of deviled eggs, or a simple hardboiled egg with a little salt, it’s time to get creative. No one wants to waste perfectly good eggs (especially in California, since they are so expensive now!) and you shouldn’t have to. Hardboiled eggs are a great source of protein, unsaturated fats and have NO carbs! They are great for snacks and can add a little something something to a boring ole meal. 1. Avocado Toast with Hard Boiled Eggs
This looks so delicious, I’m super bummed I don’t have an avocado in my house this second. All you need is some bread (preferably whole wheat if you’re trying to make this healthy!), half an avocado, a hardboiled egg and salt and pepper. Simply toast your bread, mash on some avocado and slice up your egg. Then sprinkle with salt and pepper.
