Ground turkey is (in my opinion) the most underappreciated section of the meat department. It’s often eclipsed by ground beef that’s used for everything from burgers to meatloaf. But a lot of people don’t realize that ground turkey can do just about anything ground beef can do. And better yet, turkey is a lot cheaper than beef, and if you get the leanest option, it also has a lot less fat. So less money and less fat—it’s a win-win! I’m constantly using ground turkey in my cooking. In some recipes that would normally call for beef, you can’t even tell the difference when you switch to turkey. And in some of my favorite traditionally-beef dishes, I actually prefer the turkey version. Don’t believe me? Try out these ground turkey recipes for yourself.

1. Turkey Chili

Fall is time for roast turkey and mashed potatoes, but this cool weather also means it’s the perfect time for chili. I know some people that turn chili making into an art. Most chili is made from ground beef, but substituting beef for turkey makes it healthier without affecting the taste.

I admit I’ll occasionally go even easier and heat up frozen meatballs I bought from the store, but they just don’t taste the same. I like to make meatballs in bulk, and then I have them for nights when I want a good meal but don’t feel like slaving away in the kitchen. And, let’s be honest, that’s most nights. You can use turkey meatballs for pasta or whip up some mashed potatoes and put it all together with gravy.

Stir fry is a go-to meal no matter the time of year. It’s so quick and easy, and you can use whatever ingredients you already have in the kitchen. A traditional stir fry uses slices of meat, but using ground meat makes the whole process a lot easier. And ground turkey is especially great for stir fry because the flavor is so versatile. You can use almost any vegetable you want and make it spicy or mild depending on your preference. There’s also the option of serving it with rice, noodles, or a low-carb alternative.

But like everything else, ground turkey will work just as well. It’s a slightly healthier option, and you can choose a whole-grain pasta to make an even bigger change in your diet.

This lovely salad is so easy, and thanks to the strawberries, there’s even a good chance your kids might eat it!

3 Easy Mexican Recipes For The Perfect Cinco De Mayo Fiesta

Cinco de Mayo is officially the day that Mexico celebrates its independence from its French colonizers. But over here in my kitchen, we are celebrating our independence from oppressive, time-consuming recipes. Dinner on the table in 20 minutes, anyone? And, no, it’s not hot dogs!

A lot of Mexican recipes are quick to prepare, inexpensive, and tasty. With the right pantry items in stock, I can assemble this dinner in 10 minutes and have it on the table in 20 minutes. That’s just barely enough time to set the table!

But don’t forget, you need your Mexican food to please the pickiest and tiniest eaters in your house. Mexican food is often spicy, but the plainer the better is how my little ones like to eat. These recipes are great for that, and you can always spice up and dress up the rest of the meal with a little sour cream, chopped cilantro, chopped peppers and/or hot salsa. If you’re feeling ambitious, try adding thinly sliced radishes and guacamole for an extra dash of deliciousness.

The cake is nice and moist, and the cream cheese frosting is rich and delicious. If you’re feeling ambitious, why not try decorating your cake with some frosting carrots or Easter eggs? You can also make your life easier by whipping up this cake the day before Easter–it’ll still taste great on day two.

The grilled cheese sandwich is celebrated as both a kid-pleasing lunch and even a quick dinner for nights when you’re in a pinch for time. We love it because it’s easy to make, and our kids love it because it’s simply delicious. It’s a basic concept–just bread and cheese–but if you want, you can turn your ordinary grilled cheese sandwich into a culinary masterpiece.

You might think the cheese is the most important part, it’s called a grilled “cheese” after all, but it’s the bread that will make or break your sandwich. The best grilled cheese sandwiches are crispy, crusty, and a little crunchy. That means you need your bread to be–get this–less than fresh. Stale bread is actually the best kind of bread you can use for a grilled cheese. It gives the sandwich that extra kick of great taste and texture.

I only make my grilled cheeses with slightly stale bread, and you can definitely tell the difference. Another tip for making the perfect grilled cheese sandwich is to get creative. Who said a grilled cheese sandwich needs to be boring? I love experimenting with my sandwiches and end up creating some really delicious combinations.

Just like pizza, everyone has their favorite add in to grilled cheese. This list seems just as inexhaustible as the list of potential pizza toppings. Not to mention, adding ingredients to your grilled cheese is a great way to get rid of those little leftovers. My favorite is smoked Gouda with some spinach and cooked bacon. 

Things I’ve added to my grilled cheese as of late:

  • cooked bacon
  • Andouille sausage
  • prosciutto
  • scraps of ham left from Easter dinner
  • tomato slices
  • spinach, cooked and raw
  • mushrooms
  • lobster leftover from Valentine’s dinner
  • olives
  • pepperoni
  • ground beef taco filling
  • every kind of sweet or hot pepper
  • chicken fajitas
  • black bean burger
  • ravioli

Pick ingredients you have lying around the kitchen, and test them out to see what works! It’s great way to repurpose meals and many of these will taste even better on their second go thanks to the magic of grilled cheese sandwiches.
