If you’re going to have dessert at your family Easter celebration, why not make it carrot cake? It’s the Easter Bunny’s favorite, and it’s a cake that both kids and adults will love. There are so many different ways you can make carrot cake, but this recipe is definitely my favorite.

The cake is nice and moist, and the cream cheese frosting is rich and delicious. If you’re feeling ambitious, why not try decorating your cake with some frosting carrots or Easter eggs? You can also make your life easier by whipping up this cake the day before Easter–it’ll still taste great on day two.

Carrot Cake
This cake is moist, sweet and dense. And with all those fresh carrots, it's easy to convince myself it's good for me!


  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1 ¼ cup vegetable oil
  • 2 cups white sugar
  • 1 cup golden raisins
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 teaspoon salt


  1. Beat together eggs, oil and white sugar. Should take about 30 seconds.
  2. Sift together flour, baking powder, baking soda, and spices.
  3. Add egg mixture to dry ingredients and stir.
  4. Pour batter into well-greased cake pans.
  5. Bake at 350 degrees for 60-70 minutes. (This is a heavy, dense cake and it needs a long time in the oven.)
  6. Cool cake on wire rack and then refrigerate completely before you attempt to add frosting to this crumbly cake.
Once you have the cake completely cool, whip up this simple frosting recipe and spread on the cake layers.

  • 2 8-oz packages softened cream cheese
  • ½ cup softened butter
  • 1 tsp vanilla extract
  • 2 cups confectioners’ sugar


  1. Cream together the cream cheese and butter.
  2. Add the vanilla and sugar and cream until smooth.
