
Inside Out Caramel Apples
3 large Granny Smith apples
1 large lemon
2 cups brown sugar
1/2 cup heavy cream
2 tbs butter
2 tbs light corn syrup
1 tsp vanilla extract
1/4 cup chopped pecans
Chocolate sauce (optional)
Cut each apple in half. Trim out the interior of apples so that the remainder of the apple measures about 1/2 to 1/4 inch thickness.
Using lemon, squeeze juice over apples to prevent browning.
Combine brown sugar, butter, heavy cream and corn syrup in sauce pan and cook over medium- high heat until sugar has dissolved. Bring to a boil and stir occasionally for 7-10 minutes. Remove from heat and add vanilla, stirring continually until mixture ceases to bubble. Allow to cool for about 10-15 minutes.
Remove lemon juice from apples by wiping with paper towel, to ensure that caramel mixture will adhere to dry apples.
Pour caramel into apples until nearly full and sprinkle with pecans.
Transfer apples to refrigerator to chill for 20 minutes, minimum.
Once all caramel has hardened, then slice apple halves into slices and enjoy!
