Mornings can be the craziest time of day for us busy moms. Between trying to get the kids fed, dressed, hair done, and teeth brushed, not to mention getting ourselves ready, it’s an incredibly busy time of day. As a result making breakfast for ourselves is most often put on the back burner and we end up skipping it all together. Research has shown how important eating a healthy breakfast is for our bodies and by skipping it we are not doing ourselves any favors. Even if we have time to stop for a greasy breakfast sandwich, it’s completely unhealthy and not very nutritious. There are, however, great, easy alternatives for healthy breakfasts that we can grab and take on the go. Here are 10 quick and healthy breakfasts that leave us with no excuse to miss the most important meal of the day.
1. Breakfast Fruit Popsicles
I bet you’ve never thought about having popsicles for breakfast. I’ll admit, it seems like a strange food to eat in the morning, but these incredibly healthy popsicles would make a perfect healthy breakfast on the go, especially on a hot summer day. All that’s in these beauties is yogurt and fruit! So easy and delicious. You can use your favorite flavored yogurt, plain yogurt, or even greek yogurt. The best part is that you can make these ahead of time by putting some of the yogurt in a popsicle mold, adding some fruit, then adding more yogurt, then fruit, etc, until the mold is full. Then insert a popsicle stick and put in the freezer. Once frozen, they can be taken out and eaten at any time. You can even dip them in some granola for a little yummy crunch! Definitely an easy breakfast on the go.

2. Quinoa Granola Bars
Granola Bars are a great breakfast on the go option, but lets be honest, most store bought granola bars have a lot of added sugar that make them unhealthy. Well, why not make your own granola bars? With mostly nuts, dried fruit, oats, quinoa, honey and maple syrup, they’re not only healthy, but delicious. No artificial sweeteners here. Plus, since they can be made ahead of time and stored these make a great healthy option for your morning breakfast commute!

3. Frozen Breakfast Quesadillas
This healthy packed quesadilla will satisfy your savory breakfast cravings without having to stop and spend a lot of time in the kitchen. You can make this ahead, pop it in the freezer, then reheat in the microwave in the morning before leaving the house. It’s full of egg, egg white, beans, veggies, and cheese, making it not only delicious but very filling as well. Use a whole west tortilla for an even healthier option!
